Actually (and I consider myself a bit of an expert on the subject, 'cause I've been researching it for a year for the school debate club), mentally ill people are less violent than the non-mentally ill.

IF it is a butcher-type knife stolen from, say a kitchen, it is for chopping and strength is important to that.

I think at this point it is useful to look back at the original question. Whether or not he is "inhumanly" strong become a non-issue beside the rather immediate point that you are facing a mental patient with a knife. Even if this person has yet to behave violently towards others (or, for that matter, towards himself), the threat of that violence remains. A stun gun or tear gas, non-lethal weapons, come in handy in situations like this, because though your first concern must be for your own safety and the safety of those around you, killing the poor guy isn't very appealing.

That said, "beating the living snot out of him" (paraphrased from revolutio) is a really bad idea. I don't know about the rest of you, but the last thing I would want is to be within reach of this guy.
