Taken from my LiveJournal which is notoriously empty of content.

Ingredients:
One Roast Chicken.
Two-three cups of Rice.
4 Tablespoons Butter.
4 Tablespoons Flour.
1/2 Teaspoon Salt.
2 Cups Milk.
2-3 Teaspoons Curry Powder.
Tabasco Sauce.
Some Peas, Corn and carrots(frozen or steam packs if you can get them).

Directions:
Take one large Chicken, strip the meat off it, if you have something you do with Chicken bones that I don't know about I'd love to hear it.
Start a rice cooker with enough rice for four people put it in a large pot.
Make some white sauce(Low temperature stove element Four Tablespoons Melted Butter, Four Tablespoons of Flour, half a teaspoon of Salt.(mixed together slowly for five-six minutes) then add two cups of milk over a two minute period, stir till mixed well, thats White Sauce, kick in two teaspoons of Keens Curry Powder and half a teaspoon of Tabasco sauce(which someone will no doubt say is barely enough to add flavour)).
When its a nice yellowish colour add it to the chicken and stir it through on medium.
Add one of those Steam fresh vegetable mixes(peas, corn and carrot) into the mix(after you steam cook it in the microwave, whomever thought of that idea is a genius) into the mix.
And then stir till its blended, wait for the rice and eat.
If you make enough you can feed a small family or me for two days on it.
Which I shall be doing.

Chili and Lime Chicken (4 portions)

4 pcs of Chicken filet (or chicken legs)
some oil (or your frying-medium of preference)
4-5dl (not quite a pint) Creme fraiche (or ordinary cream)
1-3 Garlic cloves
1/2-1 Chili fruit
Juice (and cest) of one lime
Salt, Pepper

Set the oven to 225°C (≈470°F). Fry the chicken til it’s got a nice surface. (Optionally, cut the chicken in smaller pieces for faster baking. Four roughly inch-and-a-half-wide (3-4 cm) pieces to a filet or so) Season with salt and pepper. Put in an oven-safe form and into the oven. (Now is when i’d start to cook the rice, if that’s what you’re having on the side) Let bake for cabout 15 min. (10-12 for smaller pieces)
Put/pour the creme fraiche/cream into a small bowl. Press the garlic into the bowl. Halve the pepper and rinse away the seeds (or not, but it’ll get a whole lot hotter). Cut finely and add to the bowl. (Add limecest and) squeeze the lime into the bowl. Mix.
When the chicken is ready, take it out and pour the sauce onto it. Put it back in the oven for another 10-12 min or when the tips are starting to darken.

Serve with rice and the salad of your choice. Red wine is nice too.

I’ve also substitued the chili and lime with fresh basil to some success.

I cooked this for my friends last night. It was amazing.

Roast lamb, onion and carrot pie, with a red wine sauce, topped with Camembert (fancy lamb and cheese pie).

400g lamb roast
onion
two carrots
pie crust
half bottle of red wine
herbs
garlic
cornflour

Oven to 160°C
Place lamb in a roasting dish, pour in 1/2 bottle of wine. Add spices and garlic to taste. Cover roasting dish. Roast two hours. Rotate regularly if lamb isn't covered by wine.
Add onion and carrots, chopped into chunks. Roast another hour.
Remove lamb and vegetables. Pour sauce into a large pan.
Chop vegetables into smaller pieces, add to sauce, simmer till cooked through.
Chop lamb into small pieces. Add to sauce.
Stir, cook for 10 minutes.
Place lamb and veges inside pie crust.
Add cornflour to remaining sauce to thicken, then pour over fillings.
Top with camembert.
Place pie top over the whole thing
Bake at 160°C for approx 30 minutes, or until golden brown.

Crazy delicious!

I named this dish.... Le Decadent. It is a dessert.

First make 24 muffins, chocolate with white and regular choc-chips.
Then cut the muffins in half while they are still cold.
Take three halves and place them around a desert bowl.
Place a large scoop of vanilla ice-cream in the middle of the three halves.
Cover the ice cream with thick hot chocolate sauce.
Use one of those spray whip creams to cover the hot chocolate.
Put a cherry on the cream.
Break a Tim-tam into a cup and then sprinkle the chips onto the top of the dish.

There are a lot of different types of chocolate in that dish, its almost like eating diabetes.

Terriaki Chicken and Chicken Rice.

I cheated with the first part of this one because I've no idea how to make the sauce from scratch which despite the extra costs involved is how I like to do my cooking.

Buy Terriaki Marinade Sauce. Follow the instructions on the bottle which will generally read:
Buy a bunch of chicken wings (about half a kilo to a kilo depending on how many you're cooking for).
Soak them in the sauce in a mixing bowl in the Refrigerator for about six hours if you want the flavour to really get into the meat.
When you put them onto the tray to cook in the oven you should have a bit of sauce left over, save that for now.
Put them into an oven at about 180C for half an hour then take them out and put the sauce that was left over from before on them as best you can(doesn't have to be all that neat and tidy just a bit here and there).
Cook at a lower temperature(150C) for about ten minutes. Remove and they're ready. You can put some more sauce on them at this point as well but I don't because the raw sauce flavour gives me headaches.


The Rice:
Get some chicken stock, about 500ml.
Chop up a small chunk of Ginger.
Chop up about three Shallots(called Scallions properly and Green Onions in America according to Wikipedia).
Take two cups of rice into a rice-cooker(if you don't have one... buy one, they cost about $40 and they're freaking great and you can buy rice for about $5 for almost 10kgs in some places, get a new rubbish bin and fill it with rice and you'll be set for a year if its water proof and you can keep the vermin out of it, you have to stir it around every few weeks).
Pour all the Chicken Stock into the cooker, then add the necessary amount of water to make the rice cook(you'll have about 50% chicken Stock, 50% water, you want more Chicken Stock than water if possible).
Put the ginger and the shallots into the mix and stir them through as well.
Cook on the cooker till its done and you get nice flavoured rice with veggies and a little spice from the Ginger.

Together these make a nice simple meal that doesn't really need much work once you know how to do it.

A bit more expensive than my usual recipes but I do enjoy it so very much.

I know a lot of us are still in our infant stages of learning how to cook properly, what ingredients mix well with each other, but how are you for technique? I was looking to aquire a good knife or two for christmas when I stumbled upon one of the more enjoyable TV chefs whoring out some knives and actually found the video educational.

Alton Brown whore's out knives

Maintaining/sharpening knives

Also, for those of you who eventually will move out from your parents house and have never helped with making a meal, don't use metal utensils on teflon coated pans, it removes the nonstick coating and puts it in your food and will probably give you cancer. You should probably be using butter or oil instead of teflon anyway.

Smoked Tuna fish, actually, and nothing beats raw onion when it comes to sandwiches. The only thing I forgot was minced garlic.
